Frosty Morning

Although, disappointingly, I didn't wake up to snow this morning, there was a light covering of frost, and the field behind the house sparkled white. A beautiful winter scene. 

I've enjoyed another relaxed day, having reached the stage between Christmas and New Year when I'm not quite sure as to what day it actually is. Not that it matters, of course. Having spent many years working all throughout the festive season, I relish this time to do with as I please.



Today, this included another walk in the woods. The low winter sun dazzled against a clear sky and puddles had turned to ice. Even by early afternoon the shaded ground was still frosted, the distant fells dusted with snow. 

On returning home, I was soon warmed up with a hot drink and it wasn't long before I was busy in the kitchen, baking for the week ahead. The weather forecast looks promising and, with some slightly longer walks planned, we need something tasty to keep us fuelled in the chilly outdoors.

Using one of the jars still remaining in the kitchen cupboard I baked some mincemeat shortbread. Just as tasty as (if not more than) mince pies, this is much more simple to bake, and makes around sixteen pieces, which are easily wrapped up to put in the pocket of my rucksack.

  3. Dull and damp here yesterday, it didn't brighten up until nearly 4pm when it was too late to go anywhere.The mincemeat shortbread looks delicious and just right for a snack :)

  6. You have just reminded me, I made this last year and I love it. It was a good way of using up the mincemeat.i used to work through Christmas it wasnt nice but it was necessary. It does make me appreciate my leisurely Christmases now.

  7. Lovely post 😊 I've just read that this bit of the year, between the two festive essays, does not actually have a word. However more recently it now sports two. Twixtmas or Merryneum ....
    On a different note, we've had loads more snow over night.... can I send it up to you? 😁

  8. It looks delicious. I love this time between Christmas and New Year, Mick always gets this period off work and it's nice to just relax after the hustle and bustle of Christmas Day. We woke to snow here this morning.

  9. That shortbread recipe is wonderful, and lovely for a winter snack. I may pinch the recipe for my rationing challenge, although I may have to skimp a bit on the butter ;-)

  11. I usually make a "mincemeat pasty" if I have stuff left over when I've filled my bun-tray. I might try something like that instead next time.

  13. When you posted that recipe last January I rather fancied making it but didn't think it would be worth it as I don't each much cake etc. We are not allowed vistors or to visit at the moment but I've decided that I am definitely getting mincemeat when I next shop and am going to have a go.
