Flapjack


A few people have requested  my flapjack recipe, so I thought I'd post it here. Although I didn't think it was possible to go far wrong with just oats, syrup, butter and sugar, for years I used to struggle and would end up with something which was either so soft it would just collapse when I tried to pick it up, or so brittle it would simply shatter when I tried to slice into it. Fed up with disastrous results and having tested out various recipes found online, I decided, instead, to experiment with the quantities of the ingredients and have discovered a recipe which works for us. Not too crunchy, not too soft and it holds itself together remarkably well when we take some along with us when out walking. Not forgetting the piece Lily has in her packed lunch every day.

115g butter
115g sugar
3 tablespoons golden syrup
280g oats

Melt together the butter, sugar and syrup then stir through the oats. Mix well then put into a lined 20x20cm tin and press down. Bake at 160°C for around 20 minutes. Let it stand for at least 10 minutes then slice into nine or twelve pieces while still in the tin. Allow to cool fully. If  you're feeling frivolous you could always drizzle with some melted chocolate.

  1. My children are all grown up now but I'm sure if you asked them they would tell you of the various flapjacks that they had fed to them, soft, hard, burnt, etc, LOL

  2. I have never made these, but they both look and sounds yummy! Somewhat like a cross between rice krispy bars and granola! I have all the ingredients on hand and should try them - my daughter might like them. I probably would like them, too, but, it's probably too high in carbs for me!

  3. For those of us in the US, I read that some stores carry Golden Syrup, but it is also available on Amazon. Apparently corn syrup isn't a substitute.

    1. Thanks for this, Sue. I believe it is sometimes available at Walmart and Trader Joe's but for anyone who is struggling you can actually make it. There are recipes online. X

  8. It does look delicious and how kind of you to share your recipe. I couldn't possibly make it having a diabetic husband, he'd want to eat it all or I'd want to eat it all first :)

  11. I love flapjack and used to make it regularly before I found I had blood sugar problems. You are right that it takes time and experimentation to find the recipe which works for you and your oven. Your recipe is very similar to the one I ended up with, and you've made me yearn to try it again.

    Something you might consider (or Lily might enjoy?) is to cook individual ones. I bought some little silicone cupcake cases (from Wilko if I remember correctly) and just dolloped a spoonful in each one, leaving them in the case until they were eaten. That way you don't have to "time it just right" to cut it up before it gets too cold and hard.

    1. It is a bit of a sugar fest, isn't it. The idea of individual ones is great, although Lily is such a creature of habit, I'm not sure she'd appreciate me 'experimenting' in this way. I will try it though. X

  14. No flour needed! And they look delicious. And sound delicious. Wonderful...!!!!!

    I have had to eat Gluten Free for years. (Doing so, cured my GERD, so it is worth it!) But it is like-finding-gold, when I find a sweet G/F recipe!

  16. They look delicious. I make flapjacks often but for me, licking the spoon is as far as it goes due to sending my blood sugars sky high (diabetic).
